Crunchy

home made granola on cold winter mornings is my remedy to a year that's chalking up to have more mornings that I'd like to crawl under the covers and hide than I would normally like. The breakfast choice reminds me of being on vacation over Thanksgiving at Bob & Sharons. A special treat in a really big Mason jar.

I'm still looking for the jar, but I found a recipe I like. I don't like fruit in my granola, so this one was perfect. And it's from Nigella's Feast, and we all know how much I love her.

Though mine's an adaptation of an adaptation - you can find the starting recipe here. (Thanks David Lebovitz!) My changes were:
  • 2 cups of oats and 3 cups of Kashi 7 Whole Grain flakes
  • 2 tbs of almond oil in place of the vegetable oil
  • 2.5 cups pecans instead of almonds
There's just something about pecans in granola that makes me all happy-like. And I'm sorry the pictures are color-wonky, winter evenings in the kitchen are hard.
